This is exciting, I’ve been coveting a waffle maker for a while now and we finally got one! It is SO WORTH IT. Before I got the waffle maker we made a lot of pancakes, they’re messy and don’t keep very well. Joel would always eat them fresh, but it’s impossible to batch cook them. Despite trying to freeze them and reheat, many pancake leftovers ended up in the bin! Waffles are 1) tastier 2) less messy 3) easier to freeze and reheat. Im a bit fan. Also this dash mini waffle maker is super cheap and cute as anything! Here’s the first of many waffle recipes to come…
- 2 eggs
- 3 tablespoons maple
- 3/4 cup non-dairy milk (we love oat!)
- 1 tablespoon apple cider vinegar
- 2 tablespoons coconut oil
- 1/2 cup of almond flour
- 1 tablespoon coconut flour
- 1 tablespoon flax
- 1 tablespoon chia
- 1 scoop collagen protein
- pinch of salt
- 1 tablespoon açaí powder
- Add all the ingredients to the blender and blitz
- Pour batter into waffle maker. Cook until nice and crispy. Stack them up, allow to cool and enjoy!
