Ingredients
- 2 lbs steak, cut into strips
- 3 bell peppers
- 2 onions
- 2 tablespoons paprika
- 1 tablespoon cumin
- 1 tablespoon onion powder
- 1/2 teaspoon garlic powder
- 2-3 tablespoons coconut oil / avocado oil
- Salt well
Instructions
- Preheat the oven to 425F
- Prep veg
- Mix spices and oil in a large mixing bowl to create the marinade
- Add the steak and coat in the marinade. Salt the steak generously
- Spread the steak in a large roasting tray or sheet pan
- Add the veg to the pan and shake well to ensure that it’s all coated in the marinade
- Pop in the oven for about 15 mins to bake
- Turn the oven onto high broil for another minute or two to allow the steak and veg to charr a bit!
- Serve with rice, corn and plenty of avocado!
