Ever since I met Mark we’ve joked that he is the fish whispered. Fish can be really tricky to cook and if you don’t watch it closely it can go very wrong. There is only one time I can remember him “over-cooking” the fish and we still laugh about it. It’s taken a decade for me to work up the confidence to follow his tutelage. I mean..talk about pressure. But honestly, if you follow the steps below broiling fish is actually pretty simple. We like to serve our salmon up with lots of greens, grains and ferments. Enjoy!
Ingredients:
- 2 lbs salmon – cut into filets
- 2-3 tablespoons macadamia but oil
- a few punches of salt
Instructions:
- Set the oven on a low broil with the top shelf on the highest setting
- Line a baking dish with tin foil
- Pour the macadamia nut oil into the pan. Add the salt and coat in the oil
- Place the salmon skin side up and generously salt the skin
- Put in the oven for about 15 minutes depending on preference. We like it JUST cooked through (medium)
