These nuggets are the perfect topping for a salad or grain bowl. They are full of flavor, slightly crispy and ever-so moist!! It’s officially TICK SEASON and apparently ticks are repelled by garlic so we’ve been adding fresh garlic to almost every recipe. Dont worry though it’s not overpowering. Just a little bit goes a long way….so vampires beware!
Ingredients:
- 2 lbs breast chicken – sliced into long strips
- 1 tablespoon coconut oil
- 1 teaspoon finely chopped garlic
- few pinches of salt
- juice of 1/2 lemon
- 2 tablespoons balsamic vinegar
- few pinches of salt
Instructions:
- Add coconut oil to your skillet and set to a medium heat
- Once the pan is nice and warm add the garlic and let it cook for a minute or two
- Add the chicken to the pan and salt generously
- Squeeze the juice of lemon over the chicken
- Turn regularly using tongs, making sure to seal the chicken on all sides. After a few minutes add the balsamic and continue to fry the chicken
- Once the meat is completely cooked through turn up the heat slightly and allow the juices to lightly brown the chicken.
- Allow to cool and enjoy!
