Ingredients:
- 3 lbs of skinless boneless chicken thighs
- 1 yellow onion (chopped into large chunks)
- 3-4 large carrots (peeled and roughly chopped)
- 3-4 stalks of celery (roughly chopped)
- 2-3 cloves of garlic
- 3 cups filtered water
- 2-3 tablespoons EVOO
- Few healthy pinches of salt
Recipe:
- Combine all the ingredients in the instant-pot
- Cook on high pressure for 25 mins
- Separate off the broth (drink or use for cooking)
