Instant-pot pulled chicken


  • 3 lbs of skinless boneless chicken thighs
    1 yellow onion (chopped into large chunks)
    3-4 large carrots (peeled and roughly chopped)
    3-4 stalks of celery (roughly chopped)
    2-3 cloves of garlic
    3 cups filtered water
    2-3 tablespoons EVOO
    Few healthy pinches of salt


  1. Combine all the ingredients in the instant-pot
  2. Cook on high pressure for 25 mins
  3. Separate off the broth (drink or use for cooking)
  4. Add this delicious pulled chicken to tacos, grain bowls, chicken salad. The possibilities are endless!
