- 1 bag of baby carrots (rainbow or orange, preferably organic)
- 2 tablespoons coconut oil / avocado oil / EVOO
- a few grinds of salt
- pinch of cinnamon / cumin (optional)
- preheat the oven to 400F
- Toss the carrots in oil and seasoning
- line a roasting tray with parchment paper
- bake for 45 mins. shaking occasionally to avoid burning.
