Coconut Cold Brew Coffee Gummies

On days when you need a little extra boost these bulletproof gummies will keep you going. Disclaimer, not for the kiddos. The dark layer is pure cold brew coffee with a little maple syrup and MCT oil. The light layer is coconut milk, maple syrup and vanilla. The best part about these gummies is that they are made with grass-fed beef gelatin (we like vital proteins) which is good for the immune, digestive, & nervous systems, bone health, hair, nails…just to name a few benefits.

Here’s how to do it….

Ingredients: 

Cold Brew Layer

1/2 cup cold brew

2 tablespoons grass-fed gelatin

1 tablespoons maple syrup / honey (optional)

1 tablespoons MCT oil (optional)

Coconut Milk Layer

1/2 cup coconut milk

2 tablespoons grass-fed gelatin

1 tablespoons maple syrup / honey (optional)

1 tablespoon pure vanilla extract

Recipe:

Start by making the cold brew layer.  Pour half of the cold brew (1/4 cup) into a small bowl and add 2 tablespoons of gelatin. Stir it up and allow the gelatin to “bloom” and set aside. In a small saucepan add the other half of the cold brew (1/4 cup) and warm over a low / medium heat. You want it to warm up, but NOT boil. This should take a few minutes. Turn off the heat once the cold brew on the pot is nice and warm add the gelatin mixture to the pot and stir in until there is an even consistency. Now get creative and add your sweeteners / boosters. We like 1 tablespoon of maple syrup. 1 tablespoon of MCT oil. Using a dropper for precision fill each gummy hole half way with the cold brew mixture. Put in the freezer to set. This should take about 10 minutes. For the coconut milk layer repeat the steps above exactly with coconut milk. Done!

But seriously, these bulletproof coffee gummies are just a bit of fun, but there are so many family-friendly varieties, the possibilities are literally endless. Homemade gummies are so much easier than you would expect. All you really need is a silicone gummy / candy mold (like the one pictured below) and a few simple ingredients and your good to go.
