Most people probably don’t think of pancakes as a quick easy breakfast option, but this recipe is our go-to when we need something fast and low fuss because the prep is as easy as flipping switch on your blender. For reals!
You can use plantains or bananas, but we’re having a little love affair with plantains right now so I’m going to wax lyrical on why we love them: yellow plantains (not green, not brown or black…yellow! A little bit of brown is ok) make the perfect paleo pancake. They are just firm enough with just a hint of sweetness. Don’t take my word for it, try for yourself to see what I mean…
- 1 yellow plantain (can also substitute 2 ripe bananas)
- 2 eggs
- 1 tbsp buckwheat flour / coconut flour / gf oats – they all work like a dream
- 1 tbsp flax
- 2 dates
- 1 tbsp maple syrup
- coconut oil for frying
Throw all the ingredients in the blender and blitz. Heat your pan and add a little coconut oil. Once the pan is hot pour the pancake batter onto the frying pan. I usually do 2 or 3 at a time so that I have space for flipping. After a few minutes flip the pancakes and cook on the other side. They should be nice and golden when ready! Enjoy!
