Instant Pot Chicken Tacos

Tacos are a fave around our house! Saucy pulled chicken, avocado, cheese and cilantro wrapped up in a corn tortilla – what’s not to love?! This instant pot recipe for pulled chicken is so easy – it can be thrown together in about 30 minutes. Once cooked serve up with your favorite taco fixings or over rice. Sometimes we even stuff this chicken into a roasted sweet potato. It’s super versatile.

2lbs boneless, skinless chicken thighs
1 can chopped peeled tomatoes
3 teaspoons paprika
1 teaspoon cumin
1 teaspoon cinnamon
1 teaspoon garlic powder
2 teaspoons onion powder
glug of EVOO

Add all the ingredients to the Instantpot.
Manual pressure cook (on high)for 18 mins.
Allow to depressure naturally. There may be extra sauce which you can drink as a yummy broth or save for another dish!
