We make this chicken dish at least once a week. Baby boy is OBSESSED with carrots so we have to save them for last to make sure he eats some protein – the pulled chicken is easy to chew for a man with few teeth and it tastes amazing! The olives add a little salty pop of color that balances everything out. You can slurp it down as a stew, but we like to sieve off most of liquid (to drink as a broth!) and serve over quinoa or rice. Voila!
2lbs boneless skinless chicken thighs
1 x pack baby carrots
1 x onion chopped
1 x teaspoon garlic powder
1 x teaspoon cinnamon
1 x teaspoon ground cumin
1 x can green olives, stones removed
juice of one lemon
small cup of water
EVOO
salt
pepper
Mix all the ingredients together in the Instantpot
Cook under pressure for 18 mins
